What´s your favourite Summerdrink or Elder Syrup - Nauli´s Flickr Favourites

"Take your hat off to the elder bush" says an old saying in Germany. The Teutons are told to admire the elder bush, because they believed that some goddess is living in the flowers. For us the flowers of the elder bush are one with the start of summer.

It´s definetly summer now in Germany. The most time quite hot, and sometimes thundering in the evening. The right weather for a fresh cold summerdrink. What´s your favourite one? Cold soda water or a fresh squeezed fruit juice?

"Zieh den Hut vor dem Hollunderstrauch", sagt man in Deutschland. Die Germanen sollen diese Pflanze verehrt haben, weil sie glaubten eine Gottheit würde darin wohnen. Für uns zeigt der blühende Hollunder den Beginn des Sommers an.

Endlich Sommer in Deutschland. Meist recht heiß, mit kurzen Sommergewittern am Nachmittag oder nachts. Genau das richtige Wetter für einen kalten erfrischenden Sommertrunk. Was ist Dein Lieblingssommergetränk im Moment? Kalter Sprudel oder ein frisch gepresster Fruchtsaft?

Well our choice is cold water with a small drop of elder syrup - selfmade elder syrup:

Unsere Wahl ist kaltes Wasser, mit einem kleinen Schuß Holundersirup - selbstgemachter Holundersirup:


It´s quite easy done, go for a walk, don´t forget a basket and your garden shears, to cut the clusters. Usually the biggest and most beautiful flowers are on the top of the tree, out of reach. But if you are lucky, it does not take too long to fill your basket. 

Es ist nicht schwer... mach einen Spaziergang, vergiß nicht einen Korb und Deine Gartenschere mit zunehmen. Meist sind die größten und schönsten Dolden am Wipfel des Baumes, außer Reichweite. Aber wenn Du Glück hast, brauchst Du nicht all zu lange um Deinen Korb zu füllen. 





Our Recipe for Elder Flower Syrup:
60 elder flower clusters
3 l water
2 kg sugar
100 g citric acid
2 lemons

Mix the water, the sugar and the citric acid. Remove insects from the elder flowers, but do not wash them, because they will loose the aroma. Squeeze the lemons, or slice them if you choosed the untreated once. Give all to the elder flowers. Douse the elder flowers with the water mixture. Let the mixture stand covered for 5 days, and stir it every day a couple of times. 
Strain the syrup through a cloth and fill it into bottles. 
If you love syrup very sweet, you can use more sugar. 

Rezept:
60 Dolden
2 Zitronen
3 Liter Wasser
100 gr Zitronensäure
2 kg Zucker

Mische das Wasser mit dem Zucker und der Zitronensäure. Säuber die Dolden so gut wie möglich von Insekten, aber wasche sie nicht, da sie sonst das Aroma verlieren. Presse die Zitronen aus, oder, hast Du unbehandelte gewählt, schneide sie in Scheiben und gebe sie zu den Dolden. Gebe die Wasser-Zucker-Zitronensäuremischung zu den Dolden und rühre die Mischung um. 
Laß die Mischung abgedeckt stehen und rühre mehrmals am Tag um. Nach 5 Tagen kann der Sirup durch ein Küchentuch abgeseiht und in Flaschen gefüllt werden. 
Wer es gern sehr süss mag, sollte mehr Zucker zugeben.

  1. my most fav summerdrink is just simply 'water' and not cold...but once in a while a like other things ...such as elder sirup wich I make every year ...and yummie to ad on a cool glass white wine ... :-)

  5. Oh this looks so good have never tried elder flowers I don't think they are available in Australia. and write now as I type this im snuggled under a balnket sipping hot green tea :) its cold here
